      cooker-and-controller1

The recommended water bath units for the Sous Vide At Home controller are large rice cookers in the range of 15 to 30 cups of dry rice with limited insulation around the sides.

Critically the rice cooker or slow cooker must be the ON/OFF type of cooker with no other electronic switching in place. These are by far teh most common. The Sous Vide At Home temperature controller will not be able to control electronic rice cookers or slow cookers.

A good indicator that the cooker will not work is the nature of the display. If there is an LCD display or the 'ON' switch is not a large mechanical unit but rather a small touch membrane switch, the controller will not be able to control it.

Slow cookers are also suitable for this unit however their heating elemens are not as powerful as rice cookers, they tend to heat up more slowly. Slow cookers also suffer due to the reduced convection in the water bath owing to the heating elements being placed around the sides of the pot and not the bottom. If using a slow cooker it is advisable to place warm water in the slow cooker at the start to save time in heating the water from cold. It is also important to keep the lid on a slow cooker to ensure maximum heating efficiency.
